Apricot, Almond, Coconut Bliss Balls
I didn't realize how much I needed a food processor until I actually got one. One of my favorite (and first real adult gifts) this Christmas was a Ninja Blender/Food Processor. For the past year and a half, I had been using a magic bullet for all of my chopping and blending needs and...it barely did the job.As someone who got used to having a Vitamix (life changing) at home, I needed something comparable for my college kitchen. This one, is fairly inexpensive considering the quality and the fact that it is both a blender and food processor. Let's just say I have been drinking a lot of smoothies out of pure excitement over this gadget.This weekend I ventured into the world of bliss balls since I finally had a good food processor to make them. I also happened to have a bag of dried apricots so I thought, why not? I'm going to be completely honest and say that I didn't have a recipe. I just kinda threw things in the food processor and somehow they came out great. What can I say? I guess I have a good chef's intuition ;)
Apricot, Almond, Coconut Bliss Balls
Ingredients:
- dried apricots (i used about 10)
- 1/3 cup slivered almonds (regular should be fine, this is just what I had)
- 2 tbsp chia seeds
- 2 tbsp coconut flakes
- 1 tbsp almond butter
- splash of almond milk or water
- cinnamon
Directions:
- Place everything in the food processor (leave some coconut flakes out) and pulse until it gets to be like a doughy consistency. (you might need to add more milk/water or almond butter until it gets sticky)
- Roll into balls, coat in coconut flakes, place in the freezer.
- Enjoy!!
I like to have these as an afternoon snack, a few for breakfast, or even with some yogurt for a dessert! They are good whenever!I hope you enjoy!
