Easy Camping Meal Ideas

For those of you who don't know, I just got back from a six day long camping trip on the Appalachian Trail. I am working on a post recapping my week and talking about the immense growth I experienced but first, I thought it would be fun to round up all the camping meal ideas I used and ate in the back country (AKA while I was camping)You all probably know by now but I like to have control of my life. Especially when it comes to the food I am eating. For this trip, I sort of dropped that control because I knew I was in good hands (and really had no other choice). By the end of the trip, I became comfortable not completely cleaning my dishes each day and having a side of dirt with each meal. It was an experience, that's for sure, but I can confidently say that the food kept me going.Eating well and decently healthy can be hard but this trip taught me that sometimes the simpler the meal, the better. I went on this trip in a group of 14 people so you could imagine we had a lot of food for the week–food that we all had to carry in our backpacks–not the easiest thing but food is always worth it.I am not itching to get back to the wilderness but I am itching to try a few of these meals in the front country :)

Breakfast:

Each morning, I started with a packet of Emergen-C and Amazing Grass greens powder. This combo not only kept my immune system up but also gave me a boost of energy which was much needed.

plain oatmeal with dried cranberries and a whole lot of peanut butter

warm granola with dried milk powder, peanut butter, and dried cranberries

green tea (the ultimate form of comfort for me)

pancakes with brown sugar

Lunch:

turkey sandwich with mayo, cheese, and lettuce (doesn't get more simple than this)

cucumber and hummus flatbreads

pizza bagel (tomato paste, monterey cheese, and turkey pepperoni)

Dinner

rice noodles with cooked cabbage and tofu pad thai

penne with marinara and pesto and chicken

burrito bowl with rice, beans, and sautéed veggies

korean bimimbap from good to-go

chile mac n cheese

And for the best part of any camping trip,

s'mores!!!!!
